I’m aces, if you are here you are already interested in finding out more about a zero carb journey so I’ll share what inspired me to give this a try.

First, someone close to me tried it (always good to have a lab rat).

I live in New Zealand and way back in the Spring (October) of 2018 we had a particularly bad allergy season, and the 2 adults in the house were struggling to breath and sleep, it was miserable for everyone.  My husband had heard about zero carb from his brother who was trying it in the US and describing great benefits in allergy reduction, so one evening he came home and announced that he would be having meat, cheese, butter, eggs and nothing else…for the foreseeable future.  He had had enough of the allergies and nothing was working!  He dashed off to the store to get some meat for dinner as I was entirely unprepared and more than a little sceptical of this new experiment.  I have an Masters degree in Microbiology and I am a quality manager, it really isn’t in my nature to just give a whole new diet which completely contradicts the food pyramid a go without months (or even years) of critical research.

All that being said, I wanted to support my husband so the next day I stocked up on meat, cheese, butter, eggs, and bacon.  At the time I was at home full time with our 3 children, so I did all I could to find interesting recipes to help him enjoy his food despite the new “restrictions.”  I learned how to make brisket, pork ribs, pork belly, and I fully embraced the BBQ for the gorgeous New Zealand grass fed beef and lamb steaks. Despite my best efforts he had a rough 2 weeks, keto flu is a thing folks, and it is not to be underestimated!

By about day 10 in the diet he was struggling to even look at his dinner and at about day 13 he came home to find pork belly that had been slow cooked to perfection but he couldn’t even stomach the smell.  However, then came day 14, and the keto conversion had finally happened and suddenly he could eat whatever I placed in front of him and he felt like a superhuman.

In the subsequent 2 weeks his allergies DID reduce, he kept telling me about how amazing he felt, how well he slept, how well he woke, and how young his body felt.  Before the diet change he had pain in his foot that hindered him going for the long walks he loved and for his entire life he had challenges with dermatitis which had also diminished.

By 30 days of zero carb the inflammation was gone, he had so much energy and vitality, it was almost annoying!  He is still eating zero carb 4 years later.
